I'm not sure of how much protein you want to get in, but i can tell you that whole eggs have roughly 6g of protein per egg, and egg whites alone have 3.5g of protein. I personally take the whole egg, but if you're only going to use the egg whites, and assuming you're using the eggs to replace a whey protein shake, you'd need 7 egg whites to get the same amount of protein (roughly). If you're using a mass gainer, the protein can range a bit, but for the sake of this reply i'll say there is roughly 44g of protein per serving. So you'd need 13 egg whites to achieve the same protein content.
How many times a day do you use your protein shake normally? I can't think of any reason you can have too many eggs in a day, unless you're eating the yolks and you're prone to cholesterol.
I've never eaten Quinoa to be honest, so can say much about that.
