you still need to hit protein and fat and carb requirements within that 2100 calories. so 182g of protein, 71g of fat, and then whatever the balance from carbs.

Do you still stick to your guns regarding Whey and Impala instant maize meal for pre / post workouts. Need something for pre workout as I gym at night and I think the pre workouts keeping me awake.

Yup..I still no stick by that..well if you taking stimulants of course you going to be awake it will distrupt your cortisol cycle. Rule is no coffee or stimulants 7 hours before bed.

Do you see any problems with this :

Morning 6-8:00 Oats
Snack 10:00 Boiled egg whites ( no yellow due to cholesterol )
Lunch 13:00 Chicken/Beef with rice/Pasta and veggies
Snack 15:00 Fruit
Pre Workout 17:30 Whey/Impala maize
Dinner 19:30 Chicken/Beef with rice/pasta and veggies

Divided into the requirements within the needed calories

Snack no protein.

Egg yolks are not the main problem for cholesterol, the non use of sex hormones are in your case.

Where are your fats?
Cholesterol is the precursor of steroids in the body.
Yes, you may be injecting T, does not mean you bypass the need for fats and cholesterol.

Your meals may include fat, so can you just clarify how much.
